Blueberry Peach Cobbler

Cobbler Filling
- 1 cup Blueberries Fresh or Frozen
- 1 cup Peach Slices Fresh or Frozen
- 2 tbsp Maple Syrup
- 1 tbsp Lemon Juice
- 1 tsp Cornstarch
Cobbler Topping
- 1 cup Rolled Oats
- 1 cup Chopped Walnuts
- 1 cup Almond Flour
- 1/2 cup Maple Syrup
- 1/3 cup Coconut Oil or Butter melted
- 1/4 tsp Salt
Place blueberries and peaches in a bowl and add maple syrup, lemon juice, and cornstarch. Mix together then transfer to an 8x8 pan leaving any juice behind. Preheat oven to 350.
In a separate bowl, mix the almond flour, oats, salt, and walnuts. Add in the maple syrup and melted coconut oil and combine until crumbly. Spread crumble across the top of the blueberries and peaches and place pan in the oven for 40-45 minutes.
Serve warm with vanilla frozen yogurt! yum!
