Gluten Free Blueberry Oat Bars

Crust/ Crumble
- 1 1/2 Cups Gluten Free Flour
- 1 Cup Gluten Free Oats
- 1/2 Cup Sugar or Maple Syrup
- 1/2 tsp Cinnamon
- 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 8 tbsp Butter Melted
- 1 tsp Vanilla Extract
Blueberry Filling
- 2 1/2 Cups Blueberries
- 3 tbsp Honey
- 1 tbsp Cornstarch
Preheat the oven to 350 degrees. Grease the 8x8 pan.
Mix the ingredients for the crust/crumble in a large bowl. Take 3/4 of the crust mixture and push into the bottom of the pan to form a base crust. Put aside the other 1/4 of the crust. You will use this for the crumble topping.
Heat a saucepan on medium heat and add the blueberries, honey, and cornstarch. Heat until the blueberries start to burst. Smash the blueberries and continue to mix until a thick filling forms. When the filling is thick enough, pour over the crust.
Take the last of the crumble and sprinkle on top of the filling all over. Place in the oven for 30-35 minutes until the filling starts to bubble and the top starts to brown. Let cool and enjoy!!
