1 1/2 CupWhole Wheat Flour
1 1/2Cup Old Fashioned Oats
3/4Cup Coconut Sugar
1tspBaking Soda
1 tbsp Cinnamon
1 tsp Nutmeg
3/4CupVegetable oil/butter/coconut oil (melted)
1 tbsp Vanilla
1/4 CupAlmond Milk
Vegan Cream Cheese Frosting
4 ozVegan Cream Cheese of Choice
1tbsp Lemon Juice
3-4CupsPowdered Sugar
SplashVanilla
Sauteed Apples
1cupApples diced
2tbsp Sugar of choice
1 tbsp Coconut oil/olive oil/butter
Instructions
Dice up 2 peeled apples and sprinkle with sugar and a little bit of lemon juice. Set aside.
In a large bowl mix flour, oats, sugar, baking soda, cinammon, and nutmeg. Next, add the oil, vanilla, and almond milk.
Grease a 9x9 Pan and coat the bottom of the pan with half of the flour mixture. Press down into the pan and then add the sugar coated apples that were set aside. Finish with the rest of the dry mixture on top.
Heat at 350 degrees for 35-40 minutes until baked through.
Vegan Cream Cheese Frosting
Place 4 oz of cream cheese in a bowl and start mixing until it softens. Squeeze lemon juice from 1/2 a lemon and a splash of vanilla in the cream cheese and then add 1 cup of powdered sugar. Mix and then add another cup of powdered sugar. Continue adding powdered sugar until desired consistency is reached.
Sauteed Apples
Dice up an apple and heat a pan with a the coconut oil. Sautee the apples and add a bit of sugar to sweeten. The sugar and oil will form a glaze with the sauteed apples.
