What could be better than a baked good with hidden vegetables and protein? I’m all about making any dessert a little more nutritious since I have a huge sweet tooth. It’s easy for me to eat a half a dozen chocolate chip cookies or half a loaf of banana bread if it’s in front of me.
This bread is full of zucchini and some extra protein from the greek yogurt. Also, a nice little tip is to eat a smaller piece with some greek yogurt on the side! Kind of like a healthier alternative to ice cream and it will help you stay full longer with the extra protein.
Those that are lactose intolerant or dairy free, you can try it with some of your favorite nut butter for more fats/protein to keep you full longer. OR you can just eat the whole loaf of this bread, no one will judge. Plus, it’s healthy right?
Heres the recipe, Enjoy!
- 1 1/2 cup all purpose flour (or any flour you choose)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon/nutmeg/ pumpkin pie spice (any or all work)
- 1 egg (or flax egg for vegan bread)
- 1/2 cup oil of choice
- 1 cup coconut sugar
- 1/2 cup vanilla yogurt
- 1 tsp vanilla
- 1 c shredded zucchini
- 1 c chocolate chips (your choice!)
Preheat oven to 350 degrees. Mix together flour, salt, baking powder, baking soda, cinnamon, nutmeg, pumpkin pie spice. In a separate bowl mix together the egg, oil, sugar, vanilla, and yogurt. Mix the wet and dry ingredients. Fold in the chocolate chips and zucchini. Bake in a greased loaf pan for 40-50 minutes until a fork comes out clean. Let it cool, then spread the love.
