These pumpkin pancakes are the easiest pancakes to throw together and so delicious. No need to put every ingredient in the pantry to get a rich pumpkin flavor.
They taste like pancakes you’d get at a pancake house! I whipped these up quick one Sunday morning and knew they were too good not to share.

Easy Pumpkin Chocolate Pancakes
This is the easiest way to make pumpkin pancakes without the hassle and you can leave out the chocolate if desired. These are made vegan, but you can always add an egg or regular milk if you'd like.

Ingredients
- 2 cups Pancake mix (any kind will work, I used Kodiak Cakes cinnamon oatmeal mix)
- 2 Tbsp Pumpkin Puree
- 1 cup Almond Milk pour to desired consistency, less for thicker pancakes and more for thin pancakes
- 1 tbsp Pumpkin pie spice
- 1/2 cup Chocolate chips Optional
Instructions
- In a large mixing bowl, mix together the pumpkin and milk.
- Add the pancake mix and pumpkin pie spice.
- Fold in the chocolate chips
- Mixed together and heat on a skillet or pan on medium heat, turning when ready.
- Optional: if leaving chocolate chips out, you can melt some chocolate chips to go on the top like I did or can fold in any ingredient you'd like.
