Gluten Free Blueberry Oat Bars

These blueberry oat bars are AMAZING, gluten free, and only 160 calories! Though I can’t take credit for these, I can certainly attest to how delicious they are.

I got this recipe from Ambitious Kitchen. I swapped out a few ingredients, but her bars were the inspiration for this healthy treat!

I love a treat with fresh, organic fruit. The blueberries I used are from a local farm and made these bars taste that much better.

The blueberries were thick and juicy and bursting with flavor in these gluten free blueberry oat bars!

I made these on a whim because I never plan anything ahead of time haha! These took practically no time. I love a quick and universal dessert/breakfast.

Gluten Free Blueberry Oat Bars

These gluten free blueberry oat bars are delicious and easy to make. They are a perfect breakfast to make you feel like you're eating dessert. Some days that's just what we need!

Equipment

  • 8×8 Baking Pan

Ingredients

Crust/ Crumble

  • 1 1/2 Cups Gluten Free Flour
  • 1 Cup Gluten Free Oats
  • 1/2 Cup Sugar or Maple Syrup
  • 1/2 tsp Cinnamon
  • 1/4 tsp Baking Soda
  • 1/4 tsp Salt
  • 8 tbsp Butter Melted
  • 1 tsp Vanilla Extract

Blueberry Filling

  • 2 1/2 Cups Blueberries
  • 3 tbsp Honey
  • 1 tbsp Cornstarch

Instructions

  • Preheat the oven to 350 degrees. Grease the 8×8 pan.
  • Mix the ingredients for the crust/crumble in a large bowl. Take 3/4 of the crust mixture and push into the bottom of the pan to form a base crust. Put aside the other 1/4 of the crust. You will use this for the crumble topping.
  • Heat a saucepan on medium heat and add the blueberries, honey, and cornstarch. Heat until the blueberries start to burst. Smash the blueberries and continue to mix until a thick filling forms. When the filling is thick enough, pour over the crust.
  • Take the last of the crumble and sprinkle on top of the filling all over. Place in the oven for 30-35 minutes until the filling starts to bubble and the top starts to brown. Let cool and enjoy!!
